Carrot Smoothie
A spice-filled, nutrient-dense fall smoothie that's great for any season!

1 blender
1 chopping knife
1 microwave-safe bowl
- 1 whole banana
- 1 cup carrots
- 1/4 cup plain greek yogurt
- 1/2 tsp vanilla extract
- 1 tsp ginger
- 1/2 tsp cinnamon
- 1 pinch nutmeg
- 1/2 cup milk of your choice
- 1 cup ice
Slice carrots into 1-inch pieces
Add carrots to a microwave-safe dish with water on the bottom and microwave on high for 3 minutes, until tender
Once cooked, add carrots directly to an ice bath to stop cooking and cool completely. Save about 1/2 cup ice for the smoothie
Slice banana into 1-inch pieces
Add all ingredients to the blender and pulse until completely smooth
Pour into a smoothie cup and enjoy!
