Carrot Smoothie

A spice-filled, nutrient-dense fall smoothie that's great for any season!

Equipment

  • 1 blender
  • 1 chopping knife
  • 1 microwave-safe bowl

Ingredients
  

  • 1 whole banana
  • 1 cup carrots
  • 1/4 cup plain greek yogurt
  • 1/2 tsp vanilla extract
  • 1 tsp ginger
  • 1/2 tsp cinnamon
  • 1 pinch nutmeg
  • 1/2 cup milk of your choice
  • 1 cup ice

Instructions
 

  • Slice carrots into 1-inch pieces
  • Add carrots to a microwave-safe dish with water on the bottom and microwave on high for 3 minutes, until tender
  • Once cooked, add carrots directly to an ice bath to stop cooking and cool completely. Save about 1/2 cup ice for the smoothie
  • Slice banana into 1-inch pieces
  • Add all ingredients to the blender and pulse until completely smooth
  • Pour into a smoothie cup and enjoy!
