Vanilla Oatmeal Smoothie

A sweet, nutritious breakfast with a whole grain addition!

Equipment

  • 1 blender
  • 1 chopping knife
  • 1 microwave-safe bowl

Ingredients
  

  • 1 whole banana
  • 1 cup cauliflower
  • 1/4 cup raw oats
  • 1/4 cup plain greek yogurt
  • 1/4 cup nut butter
  • 1 tsp vanilla extract
  • 1/2 cup milk of your choice
  • 1 cup ice

Instructions
 

Prepare the Cauliflower

  • Place cauliflower in a microwave-safe bowl with enough water to cover the bottom of the bowl.
  • Cover the bowl and microwave on high for 4 minutes until tender
  • Once cooked, place the cauliflower directly into an ice bath to stop cooking and cool completely. Save about 1/2 cup ice for the smoothie.

Prepare the Oat Flour and Other Ingredients

  • Place oats in the blender and pulse until the oats become a fine powder
  • Slice the banana into 1-inch pieces

Assemble and Make the Smoothie

  • Add all ingredients into the blender and pulse until completely smooth
  • Pour into a smoothie cup and enjoy!
