The Importance of Understanding Butter Basics: What is Butter?

Before we dive into the specifics of making homemade butter, it helps to understand what butter actually is and how we get it.

Butter is a dairy product that is made through the process of churning cream. The churning process separates the cream’s fat (butter) from the liquid (buttermilk).

Butter is primarily composed of butterfat, milk proteins, and water, and your homemade butter can be used in various cooking and baking recipes, or as a delicious spread on your homemade bread.

Why Make Your Own Butter?

It’s much easier to simply buy butter from the store instead of making it yourself, right? True, but there are several reasons why making your own butter at home is worth considering. Here are just a few!

Cost Savings

Homemade butter can be more cost-effective compared to store-bought varieties. By purchasing heavy cream in bulk, you can make a larger quantity of butter at a lower cost per unit.

Better Flavor

Homemade butter has a rich and fresh flavor that can surpass the taste of store-bought options. You have control over the ingredients, ensuring the highest quality, natural ingredients, and premium flavor.

Customization Options

When making your own butter, you can experiment with different flavors and add-ins, such as herbs, spices, or honey, to create a personalized taste experience.

Learning a Life Skill

Making butter at home is a valuable life skill that connects you to traditional culinary practices and empowers you to create your own food from scratch.

You Also Get Homemade Buttermilk!

Two Ways to Make Homemade Butter

There are two common methods to make homemade butter:

  1. Using a food processor, stand mixer, or hand mixer
  2. Making butter by hand with a shakable jar (e.g., a mason jar)

Using a food processor or mixer is obviously much faster and easier since the machine does the churning for you. Churning butter by hand takes a bit more time and elbow grease. Plus, you’ll likely need to make multiple batches since you can fit less cream in the jar than in a food processor or mixing bowl.

However, don’t underestimate the old-world satisfaction of shaking that heavy cream by hand to get some delicious butter. This method is also a great one for including the kids in your homesteading projects!

Equipment

  • 1 Mixing tool of your choice e.g., Food processor, stand mixer, hand mixer, or a mason jar with a lid
  • 1 Fine mesh strainer/sieve
  • 1 Large glass bowl sieve should be able to rest on the rim
  • 1 Cheesecloth optional
  • 1 Mixing spoon

Ingredients

  • 3 cups Heavy cream
  • 5 tbsp Ice cold water
  • Prefered add-ins (optional) e.g., salt, herbs, honey, etc.

Instructions

Using a Food Processor, Stand Mixer, or Hand Mixer

  • Pour the heavy cream into the mixing bowl.
  • Start the mixer on low speed and gradually increase it to medium-high.
  • Mix until the cream thickens and separates into butter and buttermilk. This process usually takes 5-10 minutes.
  • Once the butterfat clumps together and separates from the buttermilk, stop mixing.

Using a Mason Jar to Make By Butter Hand

  • Pour the heavy cream into the mason jar, filling it about one-third full.
  • Tightly seal the jar with the lid.
  • Shake the jar vigorously for approximately 10-15 minutes until the butterfat solidifies.

Separating the Butter and Buttermilk

  • Strain the mixture through a fine mesh strainer or sieve lined with cheesecloth to separate the butter from the liquid (buttermilk).
  • Gently press the butter to remove any excess liquid.
  • Don't throw out the buttermilk! Pour it into an airtight container and store it in the fridge for use in other recipes!
  • With the butter ball still in the cheesecloth-lined sieve, rinse it under ice cold water to remove any remaining buttermilk. This helps to preserve the butter's freshness.
  • Transfer the butter to a clean bowl and knead it with a spoon or your hands to remove any additional liquid. Discard the liquid.
  • Optional: Add salt or other flavorings to taste and mix well.

How to Store Your Homemade Butter and Buttermilk

After making homemade butter, it’s crucial to store it properly:

  1. Storing Butter: Place the butter in an airtight butter crock or wrap it tightly in wax paper or parchment paper. Store it in the refrigerator to keep it firm and lengthen its shelf life.
  2. Storing Buttermilk: Store the buttermilk in a separate airtight container — like a handy glass carafe with a lid — and refrigerate. It can be used in various recipes or enjoyed on its own.

How Long Does Homemade Butter and Buttermilk Last?

Homemade butter can typically last up to two weeks when stored properly in the refrigerator. However, the flavor and quality might diminish over time. It’s best to consume it within the first week for optimal taste.

Buttermilk, when refrigerated, usually remains fresh for about one to two weeks.
